Lately, it seems that everyone is on a health kick of some kind. One of the most popular ways that people are changing their diets is by going with some form of low carb diet. While some may choose the keto lifestyle, this can be too drastic for others. Ketoers eat less than 20 carbs a day, while simple low carbers tend to eat between 50 and 100. No matter which method you choose, eating less sugars, carbohydrates, and “white” foods has been shown to have many health benefits. In my recent low carb lifestyle choice, I have lost 8 pounds. But I missed bread!! So I did what I do, and researched the subject. Out of all of the low carb bread recipes that I have tried, this one is the most fulfilling when I am craving a biscuit or roll. Here is how I make my low carb rolls.
Ingredients:
- ½ cup almond flour
- 1 tablespoon baking powder
- 2 ½ cups shredded cheese of your choice
- 2 ounces cream cheese, cubed
- 2 large eggs
Instructions:
Preheat oven to 400 degrees
Line baking sheet with parchment paper
Mix almond flour and baking powder, and set aside
Mix shredded cheese and cubed cream cheese into a bowl, microwave for two minutes
Knead cheese mixture into dough. It will be sticky, but keep kneading. If dough becomes too hard before it is thoroughly kneaded, you can warm it a little (10-15 seconds) in the microwave to soften.
Divide dough into small balls, and roll out into “biscuits”
Bake 10-15 minutes, until golden brown
These make a great keto biscuit to add egg, bacon, and cheese to. They are also delicious with butter and sugar-free jams and jellies. This dough can also be used for pot pies, etc.
