Summer is in full swing and it is prime time for cookouts, family get-togethers and other parties. Nothing makes me happier than to have people gobble up any of my favorite summer recipes. It also feels like a complete waste of time, money and food when I make something that is barely eaten.
Over time, I have found several crowd-pleasers around the web that are my go-to summer recipes.
Homemade Pickles
The first recipe is a little unique, easy and very good. The last two years, I grew cucumbers in my garden, and they thrived. I had so many cucumbers that I decided to make some homemade dill pickles. After testing several recipes, I determined that I needed my own mix of ingredients to get the right taste. Not only were they great to share, gobbled up, but I was asked for the recipe several times.
Homemade Salsa
Over the years I have struggled to find a salsa that we love. Two summers ago, I made a blend of salsa that was very good, but it required lots of chopping by hand. Needless to say, it was not fun to make. Last year, I stumbled on another mom’s recipe for salsa that she claimed to be as easy as tossing the ingredients in a blender. Not only was she correct about the ease of the recipe, but the salsa is one of the best I have ever had. The recipe makes a lot and requires a regular to a larger size food processor.
Having made the recipe several times, I often alter the recipe slightly. Having followed the Whole 30 diet, I do not add sugar to my salsa. It is a small amount, but in my opinion, it does not alter its deliciousness. In addition, because my kids think everything is spicy, I usually do not include jalapeno. I find that the green chilies in the Rotel offer just enough spice.
Buffalo Chicken Dip
Who doesn’t love a good buffalo chicken dip? It is full of flavor and super easy to make. My favorite way to make the dip is in a crockpot because you can throw all the ingredients in the pot and mix it once it is cooked. The pot also helps to keep the dip warm throughout any event. I have tried many recipes and they are all very good and almost all consist of the same main ingredients similar to this recipe.
Homemade Whip Cream
Need to contribute a dessert? Homemade whip cream is by far one of the easiest desserts you can make and so good. Simply purchase some seasonal fresh fruit and whip up some homemade whip cream to serve. It is one of the recipes that homemade exceeds the quality of store-bought products. The recipe is almost full proof, but it can be messed up. While whipping the cream, one must be careful not to over whip. On my second making of whip cream, I became distracted and overwhipped resulting in the cream breaking down into a liquid form never to return to its once fluffy and creamy texture.
